Carrot Top Green Goddess Dressing

Ingredients

  • ½ cup mayonnaise
  • ½ cup buttermilk
  • ½ cup carrot greens, coarsely chopped
  • 1 tablespoon chopped fresh tarragon
  • 2 cloves garlic, peeled and 
 coarsely chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon freshly squeezed lemon juice
  • 3 anchovy fillets, drained and chopped
  • Salt and freshly ground pepper to taste

MAKES ABOUT 1¼ CUPS Don’t throw away those fragrant carrot greens! Use them to make pesto, chimichurri or this tasty salad dressing.

Instructions

Combine all ingredients except for salt and pepper in food processor. Blend until smooth. Season with salt and pepper.
